Extra Virgin Olive Oil The
Villa Mille Rose Extra Virgin Olive Oil has a richly aromatic bouquet and a
fresh grassy, pungent peppery flavor that can be poured directly onto pasta,
bread, fresh or steamed vegetables, salads, and meats and fish directly out of
the oven or off the grill. Our oil is certified Extra Virgin by the California

Olive Oil and Health Research by the International
Olive Oil Council (IOOC) suggests that olive oil is excellent for the digestive
system, brain activity, and bone mineralization. Further, olive oil has been
shown to have the following health benefits:
- Protects against gallstones and stomach ulcers;
- Helps relieve minor constipation;
- Reduces the rate of cardiovascular illness by lowering cholesterol levels as
effectively as low fat diet, without harming the arteries;

Balsamic Vinegar
Mille Rose Balsamic Vinegar Tradizionale is rich in complex flavors. It starts
out as a mosto cotto (or cooked grape juice) which produces alcohol and some
sugar. That product is then further transformed into acetic acid by aceto (or
vinegar) bacteria. The sugar that is left behind combines with the acetic acid,
which accounts for the sweet-sour flavor of balsamic vinegar. Each year, a
portion of the juice is withdrawn from the smallest barrel. The smaller barrel
is then refilled by the next larger barrel and so on, with the largest barrel
being refilled by the mosto cotto. The differing wood types of each barrel
contribute to the complexity of the balsamic vinegar, and the aging process
further intensifies the flavor by simple evaporation. For our Villa Mille Rose
Balsamic Vinegar Tradizionale, we use the following types of wood (from largest
to smallest): Chestnut, Mulberry, Oak, Cherry, Locust, and Ash. This Balsamic
Vinegar Tradizionale can be used in a vinaigrette on salads, drizzled on fresh
strawberries, raspberries, or a seared beef tenderloin, as well as a simple
risotto. |
