The olive orchard at Villa Mille Rose was planted in 1996 and designed by olive oil expert, Maurizio Castelli of Castello Di Volpaia in Tuscany. The three Tuscan variety olive trees: Leccino, Pendolino and Frantoio make an outstanding blend. The soil was carefully prepared by ripping the ground 6 feet, mixing the existing soil with extra soil, lava rock, oyster shell, lime and manure. Extra care was put for the drainage system to make sure the roots of the olive trees always are dry. Careful monthly maintenance is needed throughout the year for the olive trees with two extensive prunings and many light prunings. Yearly analysis of the olive leaf is needed to know the proper organic supplements needed for the soil. We are extremely fortunate that the microclimate of Villa Mille Rose, the soil and the right amount of sun help to produce this outstanding oil. The two acre olive orchard is surrounded by an organic fruit orchard, an organic kitchen garden, and Cabernet, Chardonnay and Merlot vines.
